Heartstarter

This is a little breakfast/brunch dish inspired by a local cafe.





Ingredients (serves 2):
2 small tomatoes, cut into eighths
6 medium mushrooms, quartered
1 small pack middle rasher bacon, rind removed, and cut into pieces
8 baby potatoes, roasted and chilled, then sliced into 4 -6 discs each
1 bunch english spinach, washed and separated
Sweet chilli sauce and black pepper to taste
light vegetable oil for frying

In a wok, heat about 1/4" of oil, and fry the potato discs until browned. Set aside.
Drain most of the oil off, and fry the bacon. When starting to brown, add the the mushrooms and black pepper.
When the mushrooms start to wilt, add the tomato pieces and the sweet chilli sauce.
When the tomatoes are just starting to soften add the potato back, and mix well.
Add the spinach, and toss gently until it starts to wilt. Check seasoning, and serve with orange juice and coffee.
